Our bees forage the scarlet flowers of the giant, majestic Rata trees that tower above the pristine bush of Kahurangi, New Zealand’s newest National Park. Southern Rata honey has a smooth texture, is very light and creamy in colour and conveys a buttery, delicate flavour. Rata honey will solidify to a grainy, crystallized texture in cool temperatures.
